Paul Giamatti, the actor in the iconic movie “Sideways” playing the role as Miles and his disdain of Merlot almost killed this wondrous grape varietal in California. Even after two decades with Paul’s comments, Merlot is slowly recovering from his disparaging comments on the varietal. His classic comments range from “No, if anyone orders Merlot, I’m leaving” to “I am NOT drinking any ####### Merlot!” only begins to frame the movie. A great book that just came out is called “Sideways Uncorked” by Kirk and Mira Advani Honeycutt recaps the Merlot saga as well as the rise of Pinot Noir. Many did not understand the significance of the end of the movie with Miles saving a bottle of Chateau Cheval Blanc, a blend of Merlot and Cabernet Franc that he was saving for a special occasion! He ended the movie confirming his love of Merlot!!

This 2023 Merlot is one smooth and easy drinking Merlot. The color in the glass is your first clue this is an eloquent Merlot. The color is light radiant purple/maroon and intriguing with a medium viscosity on the eyes. On the nose, ripe plum, strawberries and vanilla waft into the senses. On the palate, it is a bit of a paradox as this is both your warm and cuddly drink that is relaxing and comforting to sip. Yet you are awakened with the first sip to a mouthful of Bing cherries, plums, yet silky tannins with subtle earthy tones of bramble and minerality. At the finish, still presents as elegant and charming. This is a Merlot to absolutely enjoy today, with or without food. Alcohol is 13.7 % with 16 barrels being produced. The wine is 90% Merlot and 10% Cabernet Sauvignon and aged 20 months in 100% French oak barrels. This wine will be released Saturday May 2nd at their Q2 members release party.

Pulled this wine to have with one of our favorite “wintertime foods”, meat loaf with jalapeño peppers. This wintertime comfort food consists of ground beef, egg, chopped jalapeño peppers, minced garlic cloves, shredded Cheddar cheese, tomato sauce, Worcestershire sauce, Dijon mustard, honey, chili powder and Dark & Smokey Peppers (chipotle, ancho and habanero peppers). Accompanied by sauteed gnocchi in butter and Parmesan cheese and a fresh garden salad.
The fruit profile from the Merlot wine wrapped each bite with its many spices to manage a tangy and delicious meatloaf. Having a glass with dinner was a spot on perfect pairing.

2020 Ancient Peaks Pearl Merlot – Paired with a Slow Cooker Cowboy Beans and Pork Chops

The Winery

Ancient Peaks Winery is LARGE, consisting of 14,000 acres with 1,000 acres under vine.
As it turns out Santa Margarita is the only vineyard in the Santa Margarita Ranch AVA in the most southern portion of the AVA. Some of the more interesting factoids of the vineyard are:
- Five separate soils are intermixed and found on the property, shown on one of their labels.
- The vineyard is only 14 miles from the Pacific Ocean and draws the fog onto the property
- It is the coolest sub-AVA in Paso Robles AVA.
- Being the coolest region, they are often the latest in full maturing of the vineyards. This helps in providing a slower ripening process (often with challenges) but the reward is flavor, structure and with the varying soil types provides unique character to the grapes.
- They average 29 inches of rain with the surrounding Santa Lucia mountain range.
- Their sustainability practices have earned them SIP Certification (Sustainability in Practice).
- The owners of the winery are Karl Wittstrom, Rob Rossi and Doug Filipponi all local wine growing and ranching families in Santa Margarita.
- Santa Margarita was originally settled by the Franciscan missionaries around 1770. In 1889 the area was part of the Mexican Alta California land grant.
- It is named for Santa Margarita de Cortona Assitencia, an Italian saint.

Today they have the Oyster Ridge event building/site which is an ideal spot for weddings, corporate retreats and private events overlooking the vineyards and ranch. Additionally, they provide a host of activities in the agritourism business on the 14,000 acres including vineyard zip lining, wildlife tours and horseback trail rides.
The label called Oyster Ridge comes from so many oyster bed fossils found about the property. Here Mike Sinor is holding one fossilized oyster.

The Wines by Ancient Peaks – “Wine is bottled poetry” – Robert Louis Stevenson

Learned that their wines have three distinct labels/branding going to market which are: Ancient Peaks, Oyster Ridge and Pearl. Many of the varieties are offered with all three labels/branding. Their white wines consist of Chardonnay, Sauvignon Blanc and Viognier. The red wines offered are extensive with Cabernet Sauvignon, Nebbiolo and Sangiovese, Merlot, Syrah, Petite Sirah, Pinot Noir, Petit Verdot, Malbec, Zinfandel and of course the wine we sought out their Cabernet Franc. We were offered to taste “all the wines” but practically speaking it would be too much unless we camped overnight in the tasting room! We did taste many but not all of their wines. A second or third visit is forthcoming to taste their Nebbiolo, Pinot Noir and Petit Verdot.

This Merlot was extraordinary in “mellow-ness” yet provided ample flavor and character. First on the eyes, a beautiful deep red coloring and aromas of black plum and oak. On the palate, there are intense flavors of black cherry and blackberry. The finish was silky smooth with caressing tannins and a tinge of vanilla and cinnamon. The wine was aged 24 months in French oak barrels providing an almost perfect integration of the wine with the tannins. This wine today goes for $54/bottle and on the website today shows it on sale for $43.20/bottle, definitely a wine to be sought after!

Paired this evening with a new wintertime “comfort food” called Slow Cooker Cowboy Beans and pork chops. The Cowboy Beans consisted of ground beef, chopped bacon, baked beans with pork, kidney beans, lima beans, chopped onions, ketchup, brown sugar and mustard. Flatiron Peppers Company Calabrian chili pepper was added. The pork chops were seasoned with Flatiron Pepper Company BBQ Rub and sauteed in a cast iron skillet on the stove. Accompanying the meal was a fresh garden salad.
The wine with its fruit and mellowness was a perfect compliment to the beans and pork chops! A very good food and wine pairing this evening.
So glad we picked these wines (and others) from our visit last December. Wine Advocate summed up Ancient Peaks in a quote “keenly priced, high-quality wines that deserve to be better known”.

First on the eyes a deep purple and magenta color with a medium-heavy viscosity. This is no ordinary Merlot upon first glance! This would have made even Miles take pause and notice! Once the cork was popped, the strong aromas of plums and blackberries rushed into the senses hinting as what was to come! This mystery dark wine with beautiful aromas once in your mouth only begins to tell the story of this varietal by Cuda Ridge Wines. The dark plum flavor along with blackberries co-mingled happily like an Irish jig on the palate. On the palate, one is struck with the boldness, jammy (not sweet but texturally) and a chewy quality of the wine. On the finish, black pepper counterbalanced by a note of vanilla with subtle tannins in the background, provide an enduring conclusion to each sip.
The wine comes from the eastern portion of Livermore with the majority (90%) being Thatcher Bay vineyards where the cooling afternoon winds provide an overall warm climate. Larry adds 7% Smith Ranch vineyard Petit Verdot and 3% White Cat vineyard Cabernet Sauvignon to make this elegant wine. Barrel treatment is 90% French oak with 44% being new and 10% American oak barrels. The wine is in barrels for 19 months. Now the newsflash – it is listed at $40/bottle and comes in at 14% alcohol with only 220 cases produced.
This wine just made my annual Best Wines Tasted in 2025 for the quality and value in the category up to $51.

Adding to our wintertime “comfort foods” we decided on very thick pork chops tonight, approximately 2 ½” thick. First a spice rub coated the two pieces with ingredients of brown sugar, garlic powder, onion powder, Italian seasoning, sea salt, black pepper and chopped parsley. Tonight, two new spices from Flatiron Pepper Company were added to the rub mix; one being the Dark and Smokey (chipotle, ancho and habanero peppers) and Hatch Valley Green (Hatch green chili, jalapeno, habanero peppers). The characteristics of the spices are phenomenal with smokiness, sweet & savory tastes, citrus, intense heat and bright green chili flavor. The pork chops were first seared on the stove top and then baked in the oven.
Accompanied by sauteed asparagus, small red potatoes that were halved, then seasoned and roasted. A fresh garden salad was served with pepita seeds, cherry tomatoes, green onions and crumbled Blue cheese.
A winning combination of food and wine with its fruit, surrounded each bite of the spicy pork, cooling it down and it provided a great counterbalance to the dish.

While visiting two weeks ago, Larry provided me a bottle of his 2023 Merlot to contrast with his award winning 2022. He also provided a 2023 Cabernet Franc to compare to his award winning 2022 at the 6th Annual International Cabernet Franc Competition winning Double Gold from both the Professional and People’s Choice Judges.
My wife and I were discussing meals the other night and decided on a special cut of filet mignon with a red wine reduction sauce. We wanted to use either the Cabernet Franc or the Merlot. Finally decided on trying the meal with both wines and below is the story. Which would you choose to go with this meal?

On the palate, one is struck with the boldness, jammy (not sweet but texturally) and a modicum of grippy tannins on the wine. On the finish black pepper counterbalanced by a note of vanilla in the background, provide an enduring conclusion to each sip.
The wine comes from the eastern portion of Livermore with the majority (88%) being Thatcher Bay vineyards where the cooling afternoon winds provide an overall warm climate. Larry adds 8% Insel Carmenere, 2% White Cat Vineyard Malbec and 2% White Cat Vineyard Cabernet Franc to make this elegant wine. Barrel treatment was 50% new French oak and 30% once used French oak barrels with the balance neutral barrels. The wine was in barrels for 19 months. Now the newsflash – it is listed at $42/bottle and comes in at 14% alcohol with only 242 cases produced. It was just released on June 28th, 2025. With the nuances being different than his 2022 mix (why would anyone tweak a great wine), however with the Malbec and Carmenere, the wine provides layers and layers of mystery and intrigue even outpacing 2022!
This wine just made my annual Best Wines Tasted in 2025 for the quality and value in the category up to $51.
**2023 Cabernet Franc**

Again having won Double Gold Medals at the 6th Annual International Cabernet Franc Competition for his 2022, I was more than curious to try his 2023. How could he improve it? Here again, Larry took something excellent and made it extraordinary!

The wine consists of 93% White Cat Vineyard Cabernet Franc, 5% Thatcher Bay Vineyard Merlot and 2% Estate Petit Verdot. The wine was aged 18 months in French Oak with 43% being new, 33% once used and 24% neutral. It comes in at 14.4% alcohol with 536 cases produce. The list price is $46/bottle and was just released June 28th, 2025.
This wine, for me, not only had all the key characteristics of a well-made Cabernet Franc, as a whole, it even was larger than the components of the varietal. Yes it had fruit, modicum of pyrazines (herbaceous bell pepper notes), tannins, complexity and an alluring finish and additionally hit the palate with a bullseye! First on the eyes, a dark and alluring maroon, purple coloring and medium heavy viscosity in the glass. On the nose, aromas of black cherries and violets waft into the senses. On the palate the symphony of flavors comes bursting forth like different parts of the orchestra. Raspberries and cherries are the dominant flavors with secondary flavors of vanilla pipe tobacco, earthiness all in a well-structured and layered enjoyment of savory and appealing flavors. On the finish the juicy fruit is counter-balanced with acidity and defined grippy and pronounced tannins on the roof of the mouth and back teeth. Truly a remarkable wine and surely destined for more awards! Upon first smell and then a sip, it made my annual list for Best Wines Tasted in 2025.

So we get to the question of the day: which wine to choose with dinner? Having the butcher prepare a special large center cut filet mignon and then adding a dry rub we were set to sear and BBQ the meat to medium rare.

At the same time a red wine reduction sauce was having the final touches made to it consisting of shallots, unsalted butter, all-purpose flour, beef broth, red wine, Dijon mustard, chopped fresh Rosemary sprigs, minced fresh parsley, Kosher salt, black ground pepper and brown sugar. Accompanying the meal were sauteed Brussel Sprouts with bacon and halved roasted seasoned small red potatoes. The meal was fit for a King!

Now which wine went best with the meal? Both wines provided a great wine pairing, the Cabernet Franc with its raspberry fruit counterbalancing the sauce and tannins, engaging the meat. The Merlot provides layers of dark cherry and dark plum fruit to contrast with the red wine sauce. Both were extremely enjoyable but tipping the scale by a notch was the Cabernet Franc being more captivating. I would like to hear your thoughts on which you would choose.

This 2018 Merlot is one fierce wine and not a weak or wimpy Merlot. The color in the glass is your first clue this is a different Merlot. The color is dark purple/maroon and intriguing with a medium heavy viscosity on the eyes. On the nose, chocolate covered berries, ripe plum and vanilla waft into the senses. On the palate, it is a bit of a paradox as this is both your warm and cuddly drink that is relaxing and comforting to sip yet with some grippy tannins. Yet you are awakened with the first sip to an explosive mouthful of Bing cherries, plums, with subtle earthy tones of bramble and minerality. The finish has a textural feel, and a complex layered structure continues to enhance the wine experience. The words chewy and masculine almost come to mind in describing this beautiful wine. While having so many brawny characteristics, it still presents at the conclusion as elegant and charming. This is a Merlot to absolutely enjoy today, with or without food. Alcohol is 14 % with 242 cases being produced. The wine is 100% Merlot and aged 20 months in French oak barrels. This is worth seeing if they have any additional bottles for sale! This wine will make my annual list of Best Wines Tasted for 2025! The current vintage is their 2022 and is $38/bottle.

When your neighbors surprise you and drop off their just picked garden bell peppers and tomatoes, it seems only natural to make stuffed bell peppers! So, tonight’s meal was a new recipe calling for the bell peppers to be filled with beef, rice and veggies for an all-in-one meal. A slight twist was adding Italian sausage for more flavoring. The ingredients were olive oil, sea salt, black pepper, ground beef, chopped purple onion, minced bell pepper, finely chopped garlic cloves, diced zucchini, diced fresh tomatoes, white rice and shredded pepper jack cheese. Accompanied by a fresh garden salad with cherry tomatoes, green onions and candied almond slices. This combination was great with the wine’s smooth fruity notes and the stuffed meat (ground beef and Italian sausage) in the bell pepper. This recipe will be a standard this coming winter as “comfort food” on a cool night.

First on the eyes a deep purple and magenta color with a medium-heavy viscosity. This is no ordinary Merlot upon first glance! Even this would have made Miles take pause and notice! Once the cork was popped, the strong aromas of plums and blackberries rushed into the senses hinting as what was to come! This mystery dark wine with beautiful aromas once in your mouth only begins to tell the story of this varietal by Cuda Ridge Wines. The dark plum flavor along with blackberries co-mingled happily like an Irish jig on the palate. On the palate, one is struck with the boldness, jammy (not sweet but texturally) and a chewy quality of the wine. On the finish black pepper counterbalanced by a note of vanilla with subtle tannins in the background, provide an enduring conclusion to each sip.
The wine comes from the eastern portion of Livermore with the majority (90%) being Thatcher Bay vineyards where the cooling afternoon winds provide an overall warm climate. Larry adds 7% Smith Ranch vineyard Petit Verdot and 3% White Cat vineyard Cabernet Sauvignon to make this elegant wine. Barrel treatment is 90% French oak with 44% being new and 10% American oak barrels. The wine is in barrels for 19 months. Now the newsflash – it is listed at $40/bottle and comes in at 14% alcohol with only 220 cases produced.
This wine just made my annual Best Wines Tasted in 2025 for the quality and value in the category up to $51.

As the temperature had cooled off and the barbeque was at the ready, we decided to have a special BBQ burger this evening. Special in that finely diced purple onion, jalapeno peppers and our normal spices were mixed with the hamburger meat hours before going into the hamburger press. This allowed the uncooked meat to soak in all the flavors in advance. Once pressed, another portion of spices were applied to the meat. Accompanied by a grilled portabella mushroom and freshly made macaroni salad using small shells, peas, chopped purple onion, cut sharp cheddar cheese, chopped jalapeño peppers, chopped smoked applewood bacon and thousand island dressing. The hamburgers were cooked to medium rare and served on sesame seed bun with ketchup, mustard, purple onion slice and Kosher dill pickle slices. This was an excellent food and wine pairing with the wine embracing the spiciness of the meal with its fruits and slight vanilla on the finish. Perhaps one of the surprises of the evening, when researching a side dish for the Merlot wine, was a suggestion of mushrooms. Opting for the portabella mushroom with its earthiness and minerality it paired exquisitely with the Merlot. Who knew?

Yates Family Vineyards Visit – Grand Sweepstakes Winner of the 6th Annual International Cabernet Franc Competition

Yates Family Vineyards entered the 2025 6th Annual International Cabernet Franc Competition at the beginning of year. I had not heard of them, but everyone is invited to enter. Mary Yates filled out the form and submitted the wines at the last minute but still qualifying. The competition was held and as a first-time entrant, Yates Family Vineyards not only took the Best of Category ($71 to $85), Best of Show for all California (all price points) but also the Grand Sweepstakes Winner for all categories against a field of about 100 wines from 14 states and 3 countries from a distinguished panel of professional judges. A magnificent feat! I finally carved out the time to meet with the Yates Family team in early May. Besides the excellent wines, the surprises will amaze you!
The Winery:
The Yates Family Vineyard is in the southern portion of Napa Valley in the Mt Veeder district. The history of the area is intriguing and fascinating. It starts off in 1880 when the Streich brothers moved here from Germany to start a winery. They planted 65 acres of vines and then prohibition saw the winery’s demise. They worked the land and built not only a completely gravity feed process and were very much “technologists” for the 1880 era.
One of the more fascinating points of construction of their winery was the use of a Roman Press. Only two are in existence today and none are being used.

The Roman wine press, a significant advancement in winemaking technology, consisted of a large, mechanical press that could process large quantities of grapes at once. It utilized a heavy wooden beam (the prelum) to apply pressure to the grapes in a basin, forcing out the juice. This design, which spread throughout Europe and the Mediterranean, was based on earlier Greek presses but was more technologically advanced, utilizing windlasses or later, screw-operated levers to raise and lower the prelum.
The press typically included a large, shallow basin to hold the grapes, a heavy wooden beam (prelum) to apply pressure, and channels to collect the flowing juice.

A system of ropes, pulleys, or screws was used to raise and lower the prelum, with a team of workers operating the mechanism at the far end of the beam. The massive piece of wood was a single tree, and the basins were concrete or wood. The Roman wine press “revolutionized” winemaking by significantly increasing juice yields and increase the production of wine. The juice was then pumped out of the bins to start the fermentation process.

They also had brought or constructed a large screw press for harvesting the grapes to make wine.

The Yates Family has preserved all the equipment from the original owners and it was like stepping back in a time machine.

The Vineyards:

In 1949 Alden Perry Yates purchased the land and planted 35 acres of vines taking out many fruit trees.
While the Yates Family Vineyards land amounts to 272 acres, most of the land is extremely steep with forests covering the property. Only 35 acres of ruggedly steep land is farmed for grapes with the hillsides going up 1,200 feet elevation.

Today Yates Family produces besides their award-winning Cabernet Franc, a Viognier, a Proprietary red blend, Cabernet Sauvignon, Merlot and Malbec. I was able to taste the Merlot which was thick, savory, rich, decadent and a chewable Merlot which was delicious. It might as well be called “Gunslinger” from my perspective!
The total amount of wine produced is only 800 cases with most going to their small wine club. The balance of 100 tons of beautiful, cultivated mountain fruit goes to some of the most prestigious wineries in Napa. Many have the Yates Family Vineyards designation on their bottle.

Today, Mike Yates, son of Perry Yates, heads up vineyard management and winemaking with his oldest daughter Whitney. Mary Yates, the younger daughter, heads up the marketing and business side of the winery.
The Wine – “Wine is bottled poetry” – Robert Louis Stevenson
There is a funny background story to how they started making Cabernet Franc. Lynn, Mike’s wife, very much appreciated the intricacies of Cabernet Franc and asked him to make some. Mike obliged her and said whether it was good or bad that the one barrel produced was hers to drink if they couldn’t sell it!
The Cabernet Franc is produced using 50% new French oak barrels with medium toast, for 18 months. Then rested in the bottle for 2 years before being released! Mike is not a fan of pyrazines in his Cabernet Franc, so this is a smoother and silkier finish. It comes in at 15.1% alcohol and only 126 cases were produced. It sells for $80/bottle when available.
This is just a smidgeon of our 3-hour discussion and my history lesson on their property and winery. I was able to taste the 2021 Cabernet Franc and what a treat! The next article on Yates Family Vineyards will be about their Cabernet Franc tasting notes and food pairing.

I have been an admirer of this winery since their inception and have always stated their label of the tightrope walker represents one of the best labels – the parallelism between showing how the tightrope walker reaching a their destination and the winemaker balancing so many facets of the production to arrive at the other side safely with a grand product.

This includes vineyard management, canopy trimming, dropping fruit, harvesting at the precise moment to extract the perfect juice, formulating the right blend, keeping tannins and fruit in check, etc. I seldom talk about wine labels but theirs is the exception. The label is one of the simplest yet says so much about their wine with the balancing of the tightrope walker. This is a paradigm for balance in the fruit, tannins, acidity and color. A little too much of any one item, and a misstep happens. Even deeper is their aspiring sense of balance in life, starting in the vineyards with organic and sustainable practices. All of this requires a firm grasp of balance and finesse summed up by a tightrope walker! Funambulism is the art of tightrope walking.

It is a small family winery located in the southern edge of Saint Helena up against the western mountains in Napa Valley. Jim Young handling the administration, finances and the winemaking team is Jacky and Scott Young, a mother/son teaming up to make many exquisite wines. Currently they produce Aligoté, Chardonnay (Burgundian style), Vin Clair Rosé (lighter side of Malbec and Merlot), Cabernet Franc, Malbec, Merlot, Petit Verdot and Right Bank Blend.

Opened last night a 2014 YoungInglewood Right Bank Blend. This wine is 39% Cabernet Franc, 39% Merlot, 19% Cabernet Sauvignon and 3% Malbec. It is 14.5% alcohol and only 167 cases were produced. The percentages change yearly, and their current vintage is the 2020 at 130/bottle.
On the eyes an alluring and dark purple concentration of color with medium-heavy viscosity. On the nose aromatics of ripe raspberries and dark fruits. The blend of Cabernet Franc and Merlot were harmonized to make a mellow presentation, yet still able to pick up the nuances of Cabernet Franc. The Cabernet Sauvignon played its part to allow sufficient tannins to be presented as velvety and smooth. On the palate the Malbec provided a tinge of smokiness that was noted while sipping. A beautiful wine to enjoy alone or with a nice ribeye steak, tri tip or ribs.
This wine made my Best Wines Tasted in 2025 for sure. Only 5% of the 1500-1800 wines tasted during the year make my annual list. Treat yourself to a visit to YoungInglewood Winery as each wine is purposed and handcrafted by artisan winemakers.

Paul Giamatti, the actor in the iconic movie “Sideways” playing the role as Miles and his disdain of Merlot almost killed this wondrous grape varietal in California. Even after two decades with Paul’s comments, Merlot is slowing recovering from his disparaging comments on the varietal. His classic comments range from “No, if anyone orders Merlot, I’m leaving” to “I am NOT drinking any ####### Merlot!” only begins to frame the movie. A great book that just came out is called “Sideways Uncorked” by Kirk and Mira Advani Honeycutt recaps the Merlot saga as well as the rise of Pinot Noir. Many did not understand the significance of the end of the movie with Miles saving a bottle of Chateau Cheval Blanc a blend of Merlot and Cabernet Franc that he was saving for a special occasion! He ended the movie confirming his love of Merlot!!
This 2022 Merlot is one fierce wine and not a weak or wimpy Merlot. The color in the glass is your first clue this is a different Merlot. The color is dark purple/maroon and intriguing with a medium heavy viscosity on the eyes. On the nose, chocolate covered berries, ripe plum and vanilla waft into the senses. On the palate, it is a bit of a paradox as this is both your warm and cuddly drink that is relaxing and comforting to sip. Yet you are awakened with the first sip to an explosive mouthful of Bing cherries, plums, jagged and yet silky tannins with subtle earthy tones of bramble and minerality. The finish has a textual feel, and a complex layered structure continues to enhance the wine drinker. The words chewy and masculine almost come to mind in describing this beautiful wine. While having so many brawny characteristics, it still presents at the finish as elegant and charming. This is a Merlot to absolutely enjoy today, with or without food. Alcohol is 14.8 % with 8 barrels being produced. The wine is 100% Merlot and aged 18 months in French oak barrels. This wine will be released mid-February 2025. Price has not been released.

It is not required to have this wine in the bathtub, but perhaps worth exploring? This wine will be tasted again soon as I believe it will make the Best Wines Tasted list for 2025.

Pulled this wine to have with a new dish this evening called stuffed pepper casserole. A great wintertime comfort food consisting of chopped yellow onions, diced orange bell pepper, ground beef, tomato paste, kosher salt, ground cumin, paprika, Worcestershire sauce, black pepper, minced garlic, chopped vine-ripened tomatoes, long-grain white rice and chopped parsley. The bell pepper and ground beef were first cooked in a skillet before other ingredients being added and then baked. Shredded combination of Colby and jack cheese were added and baked on top for a few minutes. Accompanied by sauteed zucchini, summer squash and mushrooms and garlic French bread.
The fruit and tannins from the Merlot wine wrapped each morsel of the beef and spices of the casserole (bell pepper) to make a tangy and delicious meal.
