Vinoce 2019 Sauvignon Blanc
On the eyes a light colored straw with medium viscosity with brightness of clarity. On nose a very faint lemon and lime citrus and crisp. But don’t be fooled into complacency. On the palate the first sip is smooth and thirst quenching with rounded citrus of lemon and a slight sweetness of honeydew melon and stone fruit. Very little tartness and the finish is smooth as silk especially for a Sauvignon Blanc. An understated and elegant wine.
Paired with Dover sole prepared with white wine, lemon infused olive oil, pink Himalayan sea salt, ground rainbow pepper, ginger, crushed pistachios, sesame seeds, butter and a pinch of garlic salt. Accompanied by Roma tomatoes with mozzarella and drizzled with Italian dressing and balsamic vinegar. Also some fresh asparagus sautéed in olive oil and garlic.
